- Preheat your oven to 350°F (175°C) and prepare a loaf pan.
- In a mixing bowl, combine fresh eggs, Greek yogurt, and melted butter or coconut oil, whisking until smooth.
- Add baking powder, salt, and xanthan gum or psyllium husk powder to the wet mixture and stir until well integrated.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 35–45 minutes until golden and a toothpick comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
