  1. Prepare the corn by thawing and drying frozen corn or cutting kernels off fresh corn.
  2. Mix dry ingredients in a bowl: flour, chili powder, smoked paprika, garlic powder, cumin, baking powder, and salt.
  3. Add wet ingredients: an egg, fresh lime juice, and zest; mix until a thick batter forms.
