Step-by-Step Instructions
  1. Prepare the Salsa by finely chopping onions, tomatoes, and jalapeños. Combine in a saucepan over medium heat, simmering for about 5 minutes until thickened, then season.
  2. Heat the Beans in a skillet over low heat, stirring in salsa for flavor. Cook for 3-5 minutes until heated and thickened.
  3. Cook the Tortillas in a cast-iron skillet over medium-high heat for 1-2 minutes on each side until golden and crisp.
  4. Fry the Eggs in a nonstick skillet with olive oil, cooking for about 2.5 minutes for sunny-side-up or scrambling them as preferred.
