  • 4 pieces bone-in, skin-on chicken thighs or swap for chicken breasts
  • 1 teaspoon kosher salt adjust to taste
  • 1 teaspoon freshly ground black pepper adjust to taste
  • 2 tablespoons unsalted butter or use olive oil
  • 8 ounces cremini mushrooms or replace with zucchini
  • 2 large shallots or substitute with yellow onion
  • 2 stalks celery or consider leeks
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour or cornstarch for gluten-free
  • 1 cup dry white wine choose a drinkable one
  • 2 cups chicken stock low sodium recommended
  • 1 pound baby gold potatoes halved
  • 1 teaspoon fresh thyme or use dried thyme
  • 1 teaspoon fresh rosemary or use dried sparingly
  • 1 piece bay leaf remove before serving
  • 1 cup heavy cream or use half-and-half for lighter version

Method
 

Cooking Steps
  1. Preheat your oven to 325°F (163°C).
  2. Season the chicken thighs with kosher salt and black pepper.
  3. In a Dutch oven, melt butter over medium heat and sear the chicken for 2-3 minutes on each side.
  4. Remove the chicken and sauté cremini mushrooms, shallots, and celery for 5-7 minutes.
  5. Stir in minced garlic and cook for 1 more minute.
  6. Sprinkle flour and stir for 1 minute, then whisk in white wine.
  7. Add chicken stock, potatoes, thyme, rosemary, and bay leaf, then mix well.
  8. Return the chicken to the pot, skin-side up, cover, and bake for 40-45 minutes.
  9. Stir in heavy cream, adjust seasoning, and let it rest for a few minutes before serving.
