Ingredients
  

For the Sauce
  • 2 tablespoons Olive Oil Avocado oil can substitute.
  • 1/4 teaspoon Crushed Red Pepper Flakes Fresh chili peppers can substitute.
  • 3 large cloves Garlic Finely minced; garlic powder can work as a substitute.
  • 1 pint Cherry Tomatoes Sliced in half; other tomatoes can be used.
  • 1/4 cup Dry White Wine Vegetable or chicken broth can be a non-alcoholic option.
  • 1/2 cup Fresh Basil Finely chopped; parsley or oregano can substitute.
  • 2 tablespoons Fresh Lemon Juice Vinegar can be a substitute.
  • 1/2 teaspoon Fresh Lemon Zest Can be omitted if unavailable.
  • 1/2 teaspoon Salt More to taste.
  • 1 teaspoon Granulated Sugar Can be omitted or substituted with honey.
  • 1/4 teaspoon Black Pepper Fresh ground; adjust to taste.
For the Cod
  • 1.5 pounds Cod Cut into 4 fillets; any flaky white fish can substitute.

Method
 

Instructions
  1. In a large sauté pan, heat 2 tablespoons of olive oil over medium heat. Add crushed red pepper flakes and minced garlic. Sauté for about 1 minute until fragrant.
  2. Stir in halved cherry tomatoes and cook for 8 to 12 minutes until they soften and blister, releasing their sweetness.
  3. Pour in white wine and bring to a gentle simmer. Incorporate chopped fresh basil, lemon juice, lemon zest, salt, sugar, and black pepper. Let simmer for an additional 2 minutes.
  4. In a nonstick skillet, heat 2 tablespoons of olive oil over medium heat. Pat cod fillets dry and season with salt and black pepper. Place cod in the skillet.
  5. Cook cod for about 3 minutes without moving until golden brown. Flip and continue cooking for 3 to 4 minutes until fully cooked through.
  6. Pour the warm sauce over the cooked cod and heat for a minute. Serve immediately with your favorite side.
