- In a large sauté pan, heat 2 tablespoons of olive oil over medium heat. Add crushed red pepper flakes and minced garlic. Sauté for about 1 minute until fragrant.
- Stir in halved cherry tomatoes and cook for 8 to 12 minutes until they soften and blister, releasing their sweetness.
- Pour in white wine and bring to a gentle simmer. Incorporate chopped fresh basil, lemon juice, lemon zest, salt, sugar, and black pepper. Let simmer for an additional 2 minutes.
- In a nonstick skillet, heat 2 tablespoons of olive oil over medium heat. Pat cod fillets dry and season with salt and black pepper. Place cod in the skillet.
- Cook cod for about 3 minutes without moving until golden brown. Flip and continue cooking for 3 to 4 minutes until fully cooked through.
- Pour the warm sauce over the cooked cod and heat for a minute. Serve immediately with your favorite side.
