- Prep Cherries: Thoroughly drain, mince, and squeeze dry the maraschino cherries. Set aside.
- Mix Wet Ingredients: Beat together butter, vegetable oil, and sugar until creamy. Add eggs, almond and cherry extracts, and fold in cherries.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and cream of tartar. Gradually add to wet ingredients until combined.
- Bake: Preheat oven to 375°F. Drop rounded balls of dough on sheets and bake for 8-11 minutes until edges are golden. Cool on racks.
- Prepare Icing: Mix melted butter, cherry juice, almond extract, and powdered sugar until desired consistency.
