Step-by-Step Instructions for Cabbage Fritters
  1. Begin by shredding 16 oz of cabbage, grating 2 medium-small carrots, and mincing 2 cloves of garlic. Thinly slice 2-3 scallions and arrange your ingredients neatly.
  2. In a large mixing bowl, combine the shredded cabbage, grated carrots, scallions, and minced garlic. Add 3 large eggs, 4-5 tbsp of flour, and season with 1 tsp sea salt, ½ tsp black pepper, ½ tsp paprika, and ½ tsp of optional coriander. Gently toss the mixture until well-coated.
  3. Heat a non-stick skillet over medium-low heat and add 3-4 tbsp of your choice of fat. Form the cabbage mixture into small balls and flatten each slightly before placing them in the skillet. Fry for about 3 minutes on each side until golden brown and crispy.
  4. For a healthier option, preheat your oven to 420°F (215°C). Shape the fritters as before and arrange them on a greased baking sheet. Bake for approximately 20-23 minutes, flipping halfway for even browning. Broil for 1-2 minutes at the end for extra crispiness.
  5. Once cooked, remove the fritters and let them cool slightly on a paper towel. Serve warm with your favorite dipping sauce.
