Preparation Steps
  1. Peel and slice the very ripe bananas into uniform pieces, roughly 1/2-inch thick. Place into a heavy-bottomed pot.
  2. Add the sugar, rum, freshly grated nutmeg, lime juice, and water to the pot with the sliced bananas. Stir well to dissolve the sugar.
  3. Turn up the heat to medium and cook the mixture until it reaches a gentle boil, stirring occasionally.
  4. Reduce the heat to medium-low and allow to simmer for 15-20 minutes, stirring intermittently.
  5. Remove the pot from heat once the jam has thickened. Let it cool before transferring to glass jars.
