Preparation Steps
- Peel and slice the very ripe bananas into uniform pieces, roughly 1/2-inch thick. Place into a heavy-bottomed pot.
- Add the sugar, rum, freshly grated nutmeg, lime juice, and water to the pot with the sliced bananas. Stir well to dissolve the sugar.
- Turn up the heat to medium and cook the mixture until it reaches a gentle boil, stirring occasionally.
- Reduce the heat to medium-low and allow to simmer for 15-20 minutes, stirring intermittently.
- Remove the pot from heat once the jam has thickened. Let it cool before transferring to glass jars.
