- Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing or lining it.

- In another bowl, whisk the egg, oil, milk, ricotta, and vanilla until smooth.
- Fold the wet mixture into the dry ingredients until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake in the oven for 10 minutes at 400°F (200°C).
- Lower the temperature to 350°F (180°C) and bake for an additional 10 minutes.
- Cool in the pan for 10 minutes before transferring to a wire rack.
