- Begin by bringing a large pot of salted water to a boil. Add whole carrots and cook for about 10-15 minutes, or until they are fork-tender but not mushy. Once done, drain the carrots and allow them to cool slightly on a clean kitchen towel.
- After the carrots have cooled, place them on a cutting board and gently press down on each carrot to create a flattened shape, aiming for a thickness of about half an inch.
- Transfer the smashed carrots onto a parchment-lined baking tray. Drizzle them generously with olive oil, then sprinkle garlic powder, smoked paprika, and freshly grated Parmesan cheese evenly over the top.
- Preheat your oven to 425°F (220°C). Once ready, roast the carrot bites for about 20-25 minutes, or until golden brown and crispy around the edges.
