- Cut the rolled pastry into 8 equal squares.

- Layer one square of pastry with a slice of ham and a portion of cheese, adding mustard if desired.

- Crimp the edges of each stack with a fork to secure the filling.
- Brush the tops of each stack with the egg wash.
- Arrange the stacks on the lined baking sheet with space between each.
