Step-by-Step Instructions for Greek Phyllo Meat Pie
  1. Thaw the phyllo pastry in the refrigerator overnight and let it reach room temperature, covering with a damp towel.
  2. In a non-stick skillet, heat olive oil over high heat. Add ground beef and sauté for 8-10 minutes until browned.
  3. Lower heat, mix in allspice, nutmeg, cinnamon, and coriander along with sweet paprika, stirring for about 2 minutes.
  4. Add chopped leeks and onions, cooking for 5-7 minutes until softened. Stir in fresh parsley.
  5. Preheat the oven to 175°C (350°F). Whisk together milk, Greek yogurt, water, and eggs in a large bowl.
  6. Cut phyllo sheets in half and layer them in a greased baking pan, brushing every second layer with oil or milk mixture.
  7. Spread the meat and vegetable filling over the phyllo base, then layer remaining sheets in the same manner.
  8. Cut the assembled pie into squares and pour leftover milk mixture over the top. Bake for 40-45 minutes.
