Step-by-Step Instructions
  1. In a medium saucepan, combine blueberries, sugar, lemon juice, and optional lemon thyme. Bring to a boil, then reduce heat and simmer for 20 minutes until thickened. Cool for 10 minutes.
  2. Spread blueberry compote on half of the 4 slices of bread. Top with a mix of shredded white cheddar and mozzarella. Close sandwiches with remaining bread.
  3. Heat skillet over medium heat and melt butter. Cook two sandwiches for 2-3 minutes on each side until golden brown with melted cheese. Repeat for remaining sandwiches.
  4. Slice sandwiches diagonally for serving. Optionally, sprinkle with flaky sea salt and fresh thyme.
