Method
 

Step by Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, whisk together the coconut milk, red curry paste, soy sauce, rice vinegar, and honey or sugar.
  3. Grate the garlic and ginger into the mixture, stirring to combine. Add ¼ cup of water for a brothier consistency if desired.
  4. Chop the bok choy and slice the zucchini, then add them to the dish, stirring gently to coat.
  5. Arrange the dumplings on top of the vegetables, pressing them slightly into the broth.
  6. Cover with foil and bake for 20 minutes.
  7. Remove foil and bake for an additional 5 to 10 minutes until dumplings are golden brown and broth is bubbling.
  8. Garnish with sesame seeds, green onions, and cilantro, then serve over jasmine rice or noodles.
