  • 8 ounces mushrooms sliced

  • 2 cups shredded rotisserie chicken
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 2 cups fresh spinach chopped
For Seasoning
  • 1 teaspoon chili flakes optional

Cooking Instructions
  1. Heat 2 tablespoons of olive oil or butter in a large pot over medium heat.
  2. Add the diced onion and chopped celery, sauté for about 5 minutes until soft.
  3. Add the sliced mushrooms and cook for an additional 5 to 7 minutes until golden brown.
  4. Stir in the thyme and minced garlic, cooking for about 1 minute until fragrant.
  5. Pour in the chicken stock and heavy cream, bringing to a simmer for about 5 minutes.
  6. Add the shredded chicken and chopped spinach, simmer for another 5 minutes.
  7. Season with salt, pepper, and optional chili flakes to taste.
