  • 1 teaspoon Tajin or Trader Joe's Elote Seasoning Chili powder can be a substitute.
  • 4 ounces ⅓-Less-Fat Cream Cheese Low-fat cream cheese can be used.
  • ¼ cup Light Sour Cream Greek yogurt can serve as a healthier alternative.
  • 7 ounces Cotija Cheese, grated Feta can be used as a substitute.
Garnish
  • 1 handful Fresh Cilantro Adds freshness and herbal notes.

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C). Position the oven rack in the center and another rack about 6 inches below the broiler.
  2. Heat 2 tablespoons of extra virgin olive oil over medium heat in a 10-inch ovenproof skillet. Sauté the white and light-green parts of the scallions along with a pinch of salt for 2-3 minutes.
  3. Add 16 ounces of frozen corn kernels and 1 teaspoon of Tajin to the skillet. Sauté for 3-5 minutes until corn starts to soften and caramelize.
  4. Lower the heat and fold in 4 ounces of cream cheese, stirring until fully melted and combined.
  5. Remove from heat and gently fold in ¼ cup of light sour cream and ¾ cup of Cotija cheese until well blended.
  6. Transfer the skillet to the preheated oven and bake for approximately 10-12 minutes, watching for bubbling and golden edges.
  7. Switch to broil mode, sprinkle with remaining ¼ cup of Cotija cheese, and broil for 2-3 minutes until golden and bubbly.
  8. Garnish with reserved dark green scallions and fresh cilantro. Serve immediately with tortilla chips!
