Preparation Steps
- Preheat the oven to 350°F (175°C). Position the oven rack in the center and another rack about 6 inches below the broiler.
- Heat 2 tablespoons of extra virgin olive oil over medium heat in a 10-inch ovenproof skillet. Sauté the white and light-green parts of the scallions along with a pinch of salt for 2-3 minutes.
- Add 16 ounces of frozen corn kernels and 1 teaspoon of Tajin to the skillet. Sauté for 3-5 minutes until corn starts to soften and caramelize.
- Lower the heat and fold in 4 ounces of cream cheese, stirring until fully melted and combined.
- Remove from heat and gently fold in ¼ cup of light sour cream and ¾ cup of Cotija cheese until well blended.
- Transfer the skillet to the preheated oven and bake for approximately 10-12 minutes, watching for bubbling and golden edges.
- Switch to broil mode, sprinkle with remaining ¼ cup of Cotija cheese, and broil for 2-3 minutes until golden and bubbly.
- Garnish with reserved dark green scallions and fresh cilantro. Serve immediately with tortilla chips!
