Preparation Steps
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, cocoa powder, and brown sugar. Pour in melted butter and mix until wet sand texture. Press into bottom of a 9-inch springform pan.
- Bake crust for 10 minutes, then let cool completely.
- Beat cream cheese until smooth. Gradually add sugar and vanilla, blending until combined.
- Add eggs one at a time, mixing gently after each addition.
- Mix in cooled coffee and liqueur until smooth.
- Pour filling over cooled crust, smooth the top. Bake for 55-60 minutes until set.
- Turn off oven, crack the door open and let cheesecake cool in the oven for 1 hour.
- Transfer cheesecake to refrigerator and chill for at least 4 hours or overnight.
- Release the springform pan, garnish as desired, slice and serve.
