  • 24 ounces full-fat cream cheese softened
  • 0.75 cups granulated sugar adjust to taste
  • 0.5 teaspoon vanilla extract
  • 3 large eggs added one at a time
  • 1 cup brewed espresso or strong coffee, cooled freshly brewed for best flavor
  • 2 tablespoons coffee liqueur optional
  • 1 pinch salt to balance flavors
For the Garnish
  • chocolate shavings or whole coffee beans for decoration

Method
 

Preparation Steps
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, cocoa powder, and brown sugar. Pour in melted butter and mix until wet sand texture. Press into bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes, then let cool completely.
  4. Beat cream cheese until smooth. Gradually add sugar and vanilla, blending until combined.
  5. Add eggs one at a time, mixing gently after each addition.
  6. Mix in cooled coffee and liqueur until smooth.
  7. Pour filling over cooled crust, smooth the top. Bake for 55-60 minutes until set.
  8. Turn off oven, crack the door open and let cheesecake cool in the oven for 1 hour.
  9. Transfer cheesecake to refrigerator and chill for at least 4 hours or overnight.
  10. Release the springform pan, garnish as desired, slice and serve.
