Step-by-Step Instructions
- Begin by heating water in a medium saucepan to create a double boiler. Ensure the water is simmering gently.
- In the heatproof bowl, combine egg whites, pure maple syrup, and a pinch of salt. Whisk gently until warm to the touch.
- Using an electric mixer, beat the warm mixture on high speed until glossy and stiff peaks form (about 3 minutes).
- Gently fold in the ground cinnamon with a spatula, being careful not to deflate the meringue.
- Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
- Transfer the meringue to a piping bag and pipe into desired shapes on the baking sheet. Sprinkle with nutmeg and cinnamon.
- Bake for 1.5 to 2 hours until completely dry to the touch, then turn off the oven and leave the door ajar for an additional hour.
- Once cooled, remove the meringues from the baking sheet and store in an airtight container.
