  3. Using an electric mixer, beat the warm mixture on high speed until glossy and stiff peaks form (about 3 minutes).
  4. Gently fold in the ground cinnamon with a spatula, being careful not to deflate the meringue.
  5. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
