Step-by-Step Instructions for Chicken Dupiaza with Pilau Rice
  1. Prepare Onion Puree: Boil half of the diced onions in salted water for about 10 minutes, then puree until smooth.
  2. Fry Onions and Carrots: Heat ghee, fry remaining chopped onions and carrot for 5-7 minutes until golden.
  3. Add Aromatics: Stir in garlic, ginger, and spices, sauté for 2-3 minutes until fragrant.
  4. Cook Chicken: Add chicken thighs, coat with spice mixture, and cook for about 5 minutes.
  5. Simmer: Pour in chicken stock and onion puree, boil then simmer for 15-20 minutes.
