For the Steak
  • 1 lb Steak Tips (Sirloin or Ribeye) Choose ribeye for luxury.
  • 2 tbsp Cajun Seasoning Adjust according to heat preference.
  • 1 tbsp Olive Oil To achieve a sear.

Method
 

Cooking Instructions
  1. Heat a heavy skillet over medium-high heat and add olive oil and butter. Sear seasoned steak tips for 3-4 minutes on each side. Remove and let rest.
  2. In a large pot, bring salted water to a boil. Cook rigatoni according to package instructions (9-11 minutes). Reserve ½ cup pasta water, drain, and set aside.
  3. In the same skillet, add butter and sauté minced garlic over medium heat for 1-2 minutes. Pour in heavy cream and bring to a simmer.
  4. Reduce heat and stir in grated Parmesan cheese until smooth. Mix in optional mozzarella or Fontina cheese if desired. Season with salt, pepper, and Cajun seasoning.
  5. Add rigatoni to the sauce, stirring to coat. Adjust sauce thickness with reserved pasta water if needed. Fold in seared steak tips to warm.
  6. Serve the creamy pasta in plates; optionally top with extra grated Parmesan, black pepper, and hot sauce.
