Cooking Instructions
- Heat a heavy skillet over medium-high heat and add olive oil and butter. Sear seasoned steak tips for 3-4 minutes on each side. Remove and let rest.
- In a large pot, bring salted water to a boil. Cook rigatoni according to package instructions (9-11 minutes). Reserve ½ cup pasta water, drain, and set aside.
- In the same skillet, add butter and sauté minced garlic over medium heat for 1-2 minutes. Pour in heavy cream and bring to a simmer.
- Reduce heat and stir in grated Parmesan cheese until smooth. Mix in optional mozzarella or Fontina cheese if desired. Season with salt, pepper, and Cajun seasoning.
- Add rigatoni to the sauce, stirring to coat. Adjust sauce thickness with reserved pasta water if needed. Fold in seared steak tips to warm.
- Serve the creamy pasta in plates; optionally top with extra grated Parmesan, black pepper, and hot sauce.
