Method
 

Cooking Instructions
  1. Preheat your oven to 180°C (350°F). Gather all ingredients.
  2. Heat olive oil in a skillet over medium-low heat. Add sliced onions, cooking for 15-20 minutes until caramelized, adding balsamic vinegar halfway.
  3. Boil salted water in a large pot. Cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  4. In a mixing bowl, combine pasta, caramelized onions, and crumbled goat's cheese. Toss to coat evenly.
  5. Grease a baking dish with olive oil. Spread the pasta mixture evenly in the dish.
  6. Top with mozzarella and Parmesan cheese. Bake in the oven for 25-30 minutes until golden and bubbly.
  7. Let cool for 5 minutes before serving.
