  • 2 large Eggs, beaten
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Fresh ground recommended
  • 1 teaspoon Paprika Smoked paprika adds flavor
  • 1 cup Breadcrumbs (Panko recommended) Gluten-free if needed
For the Sweet Chili Mayo
  • 1/2 cup Mayonnaise Greek yogurt can be a lighter option
  • 1/4 cup Sweet Chili Sauce Homemade or store-bought
  • 1 tablespoon Lime Juice Fresh juice recommended
  • 1/2 teaspoon Garlic Powder Fresh minced garlic can be substituted

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Pat the shrimp dry using paper towels and set aside.
  3. Set up your breading station with separate bowls for flour mixture, beaten eggs, and coconut-breadcrumb mixture.
  4. Bread each shrimp by dipping in flour, then egg, and finally in the coconut-breadcrumb mixture.
  5. Place breaded shrimp on a parchment-lined baking sheet and bake for 12 to 15 minutes, flipping halfway.
  6. Whisk together mayonnaise, sweet chili sauce, lime juice, and garlic powder for the Sweet Chili Mayo.
  7. Serve warm with the Sweet Chili Mayo.
