Ingredients
  

For the Meatloaf
  • 1 pound Ground Pork Look for 80/20 or 85/15 fat ratio for best results.
  • 2 tablespoons Gochujang Add more for extra heat.
  • 1 cup Panko Bread Crumbs Regular breadcrumbs can be substituted.
  • 3 cloves Garlic (minced) Adjust to taste for extra zest.
  • 1 medium Onion (finely diced) Opt for yellow or sweet onions.
  • 3 stalks Green Onions Use whites in mixture, greens for garnish.
  • 2 large Eggs Ensure they're at room temperature.
For the Glaze
  • 1 cup Apricot Jam Can substitute with any fruit jam.
  • 2 tablespoons Honey Maple syrup is an alternative.
  • 1 tablespoon Sesame Oil Vegetable oil can be used.
  • 2 tablespoons Soy Sauce Low-sodium is healthier.
  • 1 tablespoon Rice Wine Vinegar Apple cider vinegar can be used.
  • 1 tablespoon Sesame Seeds For garnishing.

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan.
  2. In a skillet, heat 1 tablespoon of vegetable oil; sauté onions for 10 minutes until translucent, then add garlic for 2 minutes.
  3. Combine cooled onion and garlic with green onion whites, gochujang, eggs, and salt in a bowl.
  4. In another bowl, add ground pork and panko breadcrumbs, then gently fold in the wet mixture without overmixing.
  5. Transfer meat mixture to loaf pan, pressing down gently, and bake for 40 minutes.
  6. While baking, whisk together apricot jam, gochujang, honey, sesame oil, soy sauce, and rice wine vinegar for the glaze.
  7. After 40 minutes, brush glaze over meatloaf and return to oven for 10-15 minutes.
  8. Let meatloaf rest for 5 minutes before slicing and serve with sesame seeds.
